Body position

I understand that in low winds you should sit forward to lift the transom and in high winds you sit backward to induce planing. At what speeds do you move forward? Is this speed the same for upwind as it is for downwind? Is the transition from one position to the other or is there a middle speed where you sit in the middle of the boat?
